Why are there in and out doors to catering kitchens?

Often when I'm in a café or restaurant I see that there are separate doors for the staff to go into and out of kitchens. Why is this?

  1. So that the people carrying plates don't crash into each other and break the plates and glasses. It makes serving and tidying up much more effective.
  2. Do you want to be the one heading OUT of the kitchen with a full tray of food at the exact moment that someone's heading IN to the kitchen with a full tray of dirty dishes? Didn't think so.
