How to make a light cheese sauce?

Not kraft but like CA pizza kitchen's mac and cheese sauce or any restaurant that makes their own mac and cheese. its for pasta.

  1. Melt some butter in a sauce pan, mix in some flour to thicken and make a paste. Add some milk for desired consistancy Next add shredded cheese and stir until you have a beautiful cheese sauce. It works with almost any type of cheese even parmesan for alfredo sauce!
  2. I do exactly what the first answer put!....it works great and its not processed yuck cheese, and I also ad pureed cawliflower or pureed garbanzo beans to make it extra nutritious.

Ingredients 4 teaspoons all-purpose flour 1 cup 1% milk, divided 1/2 cup grated sharp Cheddar cheese 1 teaspoon dry mustard 1/2 teaspoon sweet paprika Cayenne pepper to taste (optional) 1/4 teaspoon salt, or to taste Directions Whisk flour with 2 tablespoons milk in a small bowl until smooth. Heat the remaining milk in a small saucepan over medium heat until steaming. Add the flour mixture and cook, whisking constantly, until the sauce bubbles and thickens, 2 to 3 minutes. Remove from the heat; stir in Cheddar, dry mustard, paprika, cayenne (if using) and salt.
