What are the ADA guidelines for residential kitchens in churches?

In certain churches we use large residential-style equipment to create a kitchen that can feed two or three hundred people. We are currently debating whether the counter tops all need to be at 34", whether only a few need to be at 34", or if none need to be at 34". ADA 4.2.5 refers to Figure 6(c) which shows 34" max. However, we haven't been able to find any standard which spells out what percentage of a kitchen needs to comply with ADA. Again, these are not commercial kitchens, they are large kitchens using residential equipment.
